Pumpkin Lentil Soup

INGREDIENTS
- Pumpkin-1 cup chopped 100 gm.
- Red Lentils (Masoor Dal) – 3 tbsp.
- Onion- 1 medium
- Carrot 1-2 small
- Water- 3 cups
- Vegetable broth-1 cup
- Salt- As per taste
- Turmeric powder- a pinch (optional)
- Coriander powder-1 tsp.
- Cumin Powder- 1 tsp.
- Tomatoes (optional) 1-2 small
- Ginger chopped- 1 tsp.
- Garlic Paste- 1 tsp. Chopped
- Green Chili- 1
- Lime juice- 1 tsp.
- Coriander leaves 2 tbsp.
- Ghee 1 tsp.
- Black peppercorns- 2-3

INSTRUCTIONS 
- In a cooker, add ghee
- When hot, drop the black peppercorns, green chill, chopped onions, carrots and sauté.
- Add ginger and garlic pastes and sauté.
- Add the lentils, sauté, add cumin and coriander powder
- Add pumpkin pieces, salt and water.
- Close the cooker and let the soup cook for 10 minutes.
- Open, blend the soup in a mixer.
- Strain and add it back to the pan with additional vegetable stock.
- Let it simmer, adjust salt, add coriander leaves and lime juice
- Serve into bowls.
